Pumpkin Bars

Several Sisters have requested the recipe for the Pumpkin Bars that we served at our last activity.  It was a wonderful evening topped off with wonderful dessert! Thanks to Deanna Taylor and her committee for a spectacular evening!

Pumpkin Bars from Paula Deen
4 eggs
1 2/3 cup granulated sugar
1 cup oil
1 15 oz can pumpkin
2 cups sifted all-purpose flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
1/2 tsp nutmeg

ICING:
1 3 oz pkg cream cheese, softened
1/2 cup (1 stick) butter or margarine, softened
2 cups sifted powdered sugar
1 tsp vanilla

1. Preheat oven to 350 degrees
2. Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy.  Stir together the flour, baking powder, cinnamon, salt and baking soda.  Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.
3. Spread the batter in a greased Jelly Roll pan (use spray to coat pan)  Recipe says to bake for 25-30 minutes but I set my timer on 20 min and it came out done.  Always set your timer for earlier than the times say and keep checking until done!
4. To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth.  Add the sugar and mix at low speed until smooth.  Add the sugar and mix at low speed until combined.  Stir in the vanilla and mix again.  Spread on cooled pumpkin bars.
(I put some mini chocolate chips on top of the frosting and that turned out good as well!)
